Slow Cooker Cheesy Chicken Hash Recipe
This delicious dish uses frozen hash browns for the traditional potatoes and substitutes ground chicken for leftover cooked meat.
Makes 4-5 servings
Ingredients: 6 cups (1.5 L) frozen diced hash brown potatoes, thawed, 1 pound (480 g) uncooked ground chicken (use turkey as a substitute), 1 large yellow onion, peeled and finely chopped, 1/2 cup (125 ml) chopped fresh parsley, 12 oz (360 ml) can evaporated milk, 2 tablespoons (30 ml) Worcestershire-style marinade for chicken, 1 tablespoon yellow mustard, 3/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, 1/2 cup (125 ml) shredded Swiss cheese
Instructions: Grease 3½-4- quart (3½-4 L) slow cooker with nonstick cooking spray. In the greased slow cooker, combine potatoes, ground chicken, chopped onion, and parsley. Mix well.
In a medium mixing bowl, combine evaporated milk, Worcestershire-style marinade, Yellow mustard, salt, and black pepper. Whisk well and stir into potato mixture.
Cover slow cooker and cook on low-heat setting for 4½-5 hours. Turn off slow cooker and open the lid. Spoon off the fat and transfer cooked chicken hash to serving plates. Sprinkle each plate with shredded Swiss cheese. Serve hot.
Slow Cooker Orange Chicken Breasts Recipe
- 1½ pounds (1.44 kg) skinless and boneless chicken breasts, cut into cubes
- 1 cup (250 ml) freshly squeezed orange juice (pulp removed)
- zest from 1 orange
- 1/4 cup (60 ml) light soy sauce
- 2 cloves garlic, peeled and minced
- 1 tablespoon cornstarch
- 1/2 teaspoon red chili flakes
Place cubed chicken breasts at the bottom of slow cooker. Pour orange juice over the chicken. Stir in the orange zest, soy sauce, and minced garlic.
Cover slow cooker and cook on low heat setting. Open the lid and remove cubed chicken form the slow cooker. Stir cornstarch into the sauce. mIx until you reach desired consistency.
Return chickne to the slow cooker. Stir wel, coating with sauce. Cook for further 15 minutes.
Tunr off slow cooker and open the lid. Remove chickemn mixture from slow cooker and trancfer to serving plates. Serve over cooked rice. Top with red chicli flakes for a little spice.
