Fried crispy salted shrimp.Salty and spicy shrimp fried in deep fryer.Delicious!
- 1 pound (480 g) shrimp,deveined,heads on
- 1 cup (250 g) rice flour
- 1½ tablespoon kosher salt
- 1 red chili pepper,sliced
- 1/4 cup (60 g) green scallions,sliced
- vegetable oil
In a colander,run shrimp under cold water. Drain and pat dry with paper towel. Sprinkle kosher salt over the shrimp. Toss well to coat each shrimp.
Refrigerate for 10 minutes.
In a deep fryer,preheat vegetable oil to 375 F (190 C).
Remove shrimp from refrigerator. Sprinkle rice flour all over and toss well to coat. Sift to get rid of any extra flour.
In a batches,add shrimp to preheated oil and fry until lightly golden and crispy. Transfer fried shrimp to a paper towel lined plate. When the grease has been drained, gently toss fried shrimp with sliced scallions and chilies.
