Fried Tebasaki Chicken Wings Recipe
Ingredients
- 10 chicken wings
- 3 tablespoons potato starch
- peanut oil for frying
- For the Sauce:
- 2 tablespoons granulated sugar
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 2 tablespoons cooking sake
- 2 tablespoons rice vinegar
- sesame seeds, to serve
- sesame oil, to drizzle
Method
Step 1
Pat chicken wings dry, using a kitchen roll. In a large plastic bag, combine wings and potato starch. Shake well.
Step 2
In a deep-frying pan, heat the peanut oil to 360 F (180 C). Place seasoned chicken wings in the hot oil and deep-fry for 5-7 minutes or until golden-brown and crisp.
Step 3
Remove fried wings from the fryer and transfer to paper towels.
Step 4
In a small saucepan, combine sugar, mirin, soy sauce, rice vinegar, and sake. Mix well. Cook over medium heat, stirring occasionally until the sugar has dissolved and the sauce has thickened slightly.
Step 5
Remove the sauce from the heat and transfer to a small bowl. Sprinkle chicken wings with sesame seeds and drizzle with sesame oil. Serve hot.
