Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds (960 g) stewing beef, cubed
  • 1 medium yellow onion, peeled and finely chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon caraway seeds
  • 2 tablespoons paprika
  • 2 cups (500 ml) beef stock
  • 1 cup finely sieved tomatoes
  • 3 tablespoons dry red wine
  • 2 tablespoons almond flour
  • salt to taste
  • fresh parsley, for garnish

Method

Step 1

Heat half of the oil in an instant pot turned to the saute mode. Working in batches, add cubed beef and brown on all sides. Remove browned meat from the cooker and set aside.

Step 2

Add the remaining oil and saute the onion, stirring occasionally, until soft. Turn the pot off, then quickly stir in minced garlic, followed by caraway seeds and paprika.

Step 3

Pour the beef stock into the instant pot and deglaze the pot. Add the remaining ingredients and stir well.

Step 4

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 25 minutes.

Step 5

Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Stir goulash well before serving. Serve hot.
