Ingredients
- 4 tablespoons ghee
- 3 cloves garlic, peeled and minced
- 4 cups cremini or white mushrooms
- 1/2 cup fresh parsley leaves, chopped
- 4 sprigs fresh oregano, chopped
- 1 cup (250 ml) vegetable broth
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly grpound black pepper
- 1/4 teaspoon dried marjoram
- 4 sprigs thyme leaves, chopped
Method
Step 1
Heat the ghee in an electric instant pot, turned to the sauté mode. Add mushrooms and garlic. Cook, stirring occasionally, for 5 minutes.
Step 2
Add chopped hearbs to mushrooms. Stir well.
Step 3
In a small mixing bowl, combine the vegetable broth, salt, black pepper, and marjoram. Mix well, then pour over the mushrooms.
Step 4
Close the pot and lock the lid. Set the machine to cook at high pressure. set the timer to cook for 5 minutes.
Step 5
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Using the slotted spoon, transfer cooked mushrooms to a serving bowl.
Step 6
Switch the cooker to the saute mode. Bring the liquid to a boil. Cook, stirring often, for 3-5 minutes.
Step 7
Pour the liquid over mushrooms. Serve mushrooms hot.
