Slow Cooker Chicken Parmesan Soup
Ingredients
- 1 tablespoon cooking oil
- 1 large onion, peeled and diced
- 2 cloves garlic, peeled and chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon fennel seeds, crushed
- 6 cups (1.5 L) homemade chicken broth
- 1 pound (480 g) boneless, skinless chicken breasts
- 28 oz (840g) can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 6 oz (180 g) Italian pasta
- 1/2 cup (125 g) freshly grated Parmesan cheese
- 1 handful fresh basil, chopped
- salt and freshly ground black pepper to taste
Method
Step 1
In a slow cooker, combine all ingredients, except pasta, Parmesan cheese, and basil. Cover slow cooker and cook on low-heat setting for 6-10 hours or on high for 2-4 hours.
Step 2
Remove cooked chicken breasts from slow cooker and shred them. Return to slow cooker, then add pasta and Parmesan cheese. Cook for a further 10 minutes or until pasta is cooked al-dente.
Step 3
Sprinkle with freshly chopped basil and serve.
