Ingredients
- 2 pounds (960 g) boneless and skineless chicken breasts
- 1/2 cup (125ml) orange juice
- 1/2 cup sliced mushrooms
- 1/2 teaspoon cracked black pepper
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 red bell pepper, cored and stripped
- 1 green bell pepper, cored and stripped
- 1 medium yellow onion, peeled and sliced
- 2 teaspoons olive oil
- 1 lime
- warm flour tortillas
- 2 teaspoons kosher salt
Method
Step 1
In a small mixing bowl, combine all dry ingredients. Mix well.
Step 2
In a 6-quart (6 L) slow cooker, combine chicken breasts, orange juice, and half of the seasoning mixture. Top with bell peppers, onions, and mushrooms. Drizzle with olive oil, then season with the remaining seasoning mixture.
Step 3
Cover the pot and cook on a high-heat setting for 3½-4 hours or until chicken is tender.
Step 4
Turn off the cooker and open the lid. Using tongs, remove cooked chicken breasts and transfer them to a cutting board. Slice against the grain. Return sliced chicken to the crock pot and mix well.

Serve as is or with warm tortillas, chopped fresh cilantro, and lime.
