Ingredients
- 2 pounds (960 g) boneless pork shoulder
- 2 tablespoons cooking oil
- 1/4 cup (60 ml) chicken broth
- 3 tablespoons quick-cooking tapioca
- 3 tablespoons reduced sodium soy sauce
- 3 tablespoons oyster sauce
- 1 teaspoon freshly grated ginger
- 15 ¼ oz (458 ml) can pineapple chunks
- 1 largeyellow onion, peeled and sliced
- 3 cups hot cooked rice
- chopped green onions, to serve
Method
Step 1
Lightly grease inside of slow cooker with cooking spray.
Step 2
In a slow cooker combine broth, tapioca, soy sauce, oyster sauce, and ginger. Mix well.
Step 3
Stir reserved pineapple juice into the broth mixture. Cover and chill pineapple chunks.
Step 4
Add onion and pork to the slow cooker. Cover crockpot and cook in a low-heat setting for 6-8 hours. After 6 hours, turn to a high-heat setting. Stir chilled pineapple chunks into the slow cooker.
Step 5
Cover and cook for additional 10-15 minutes. Sprinkle with chopped green onions and serve over the cooked rice.
