Ingredients
- For Bang Bang Sauce:
- 1/2 cup (125 ml) mayo
- 1/2 teaspoon sriracha sauce
- 1/4 cup (60 ml) sweet chili sauce
- For Bang Bang Shrimp Batter:
- 2 pounds (960 g) jumbo shrimp, shelled, deveined, tails intact
- 1/2cup (125 ml) buttermilk
- 3/4 cup cornstarch
- 1 cup Panko breadcrumbs
- 1 teaspoon freshly chooped cilantro, for garnish
- 1 tablespoon avocado oil
Method
Step 1
In a medium mixing bowl, add all Bang bang sauce ingredients. Whisk well and set aside.
Step 2
Preheat your air fryer to 400 F (200 C) for 5 minutes. Grease the air fryer basket with avocado oil.
Step 3
Working in batches, coat shrimp in cornstarch, then dip in buttermilk, and after dip in breadcrumbs.
Step 4
Add seasoned shrimp to the greased basket. Fry at 400 F (200 C) for 10 minutes, flipping halfway through and brushing with more avocado oil.
Step 5
Remove fried shrimp from the fryer and transfer to a serving plate. Drizzle reserved sauce over the shrimp and sprinkle with chopped cilantro, if desired. Serve hot.
